Brown Butter Matcha Madeleines

Ingredients:

  • ½ cup unsalted butter
  • 1 ½ tablespoons matcha powder 
  • 2 large eggs room temperature
  • ⅔ cup granulated sugar
  • 2 teaspoon pure vanilla bean paste
  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • 2 tablespoons milk
  • Pinch of salt
  • White chocolate chip for coating
  • Matcha powder

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a madeleine pan with butter or cooking spray. No need to grease if you use silicone mold.
  2. In a small saucepan, melt the butter over medium heat. Allow it to cook, swirling the pan occasionally, until the butter turns golden brown and gives off a nutty aroma. Remove from heat and set aside to cool.
  3. In a mixing bowl, sift the matcha powder to remove any lumps.
  4. In a separate large bowl, beat the eggs and granulated sugar together until light and fluffy. Add the milk and vanilla bean paste. Mix until well combined.
  5. In another bowl, whisk together the all-purpose flour, baking powder, salt, and sifted matcha powder.
  6. Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined. Avoid overmixing. Then, fold in cooled brown butter, 
  7. Rest the batter for at least a hour to overnight. Spoon the batter into the prepared madeleine pan, filling each mold about ¾ full.
  8. Bake for approximately 10-12 minutes, or until the madeleines are lightly golden around the edges and spring back when lightly pressed.
  9. Remove the madeleines from the oven and allow them to cool in the pan for a few minutes. Carefully transfer them to a wire rack to cool completely.
  10. Once cooled, melt the white chocolate and mix in some matcha powder until you get the green hue desired. Pour the melted white chocolate in to the Madeleine pan and dip the Madeleine cookies until the front surface covered. Let it sit in the freezer for 10 minutes then the Madeleine should be easily popped out. 
  11. Serve and enjoy these delightful brown butter matcha madeleines with pure vanilla bean paste alongside a cup of tea or coffee.

These madeleines are best enjoyed fresh but can be stored in an airtight container for up to 2-3 days.
